The dish arrives white. Not cream, not pale yellow — white. A pure omelet, unbroken, sitting over rice. Then the knife goes in, and a deep orange yolk runs out from the center.
Chef Shimizu uses two different eggs to get there. The outer omelet is made from a Hokkaido variety with a naturally white yolk. The flowing center comes from a Shiga Prefecture egg, chosen for the intensity of its color. The demi-glace underneath is onion-heavy and long-cooked, the kind of sauce that takes a hotel kitchen and the patience to match. Shimizu spent years as executive chef at the Kobe Kitano Hotel and Kyoto Brighton Hotel before opening here in 2020. The omurice is where that background is most visible.
Lunch is when most people come for it. The set adds a one-bite corn potage — more concentrated than it has any right to be at this price — and small sides. The room is bright and the pace is quick.
In the evening the register shifts. The kitchen starts sending out small plates and the sake list comes forward. Juyondai from Yamagata, Ouroku from Shimane — the kind of labels that don't appear on many menus, served by the glass at prices that don't reflect their scarcity. Wagyu cheek aburi, mino-katsu, charcoal-grilled spare ribs. The white omurice is still available at night in a half-size, which works as a way to finish the meal rather than anchor it.
