Kyoto’s Classic DIY Sukiyaki

Sukiyaki Kimura has been a fixture of the Teramachi shopping district for nearly a century. While Kyoto is often associated with high-end dining, Kimura represents a more accessible, domestic side of the city's food culture. The restaurant is located on the second and third floors of a traditional building, with a capacity of over 250 seats across worn tatami mats. It is a functional, busy environment that has remained largely unchanged for decades.

The restaurant’s primary advantage is its history as a meat wholesaler. By purchasing whole domestically raised Black Wagyu, they maintain lower price points than most sukiyaki houses in the city. The menu is narrow, offering a "Standard" set for 3,100 JPY and "Loin" for 3,300 JPY. The focus is strictly on the value of the beef rather than a long list of side dishes.

The dining style at Kimura is strictly self-service. Unlike high-end ryotei where a server prepares the meal, guests at Kimura grill the meat themselves. The Kansai-style involves rubbing the iron pot with beef tallow, searing the meat, and applying coarse sugar and a dark soy-based sauce directly in the pan. Vegetables, including Kujo leeks and Kyoto-style fu (wheat gluten), are added as the pot develops heat.

Because you manage the heat and seasoning yourself, the flavor can become concentrated and salty as the sauce reduces. A water pitcher is provided at each table specifically to dilute the sauce as needed. It is a casual, hands-on process that requires some attention to prevent the sugar from burning.

For the final stage of the meal, it is common to order extra rice and an egg to mix with the remaining sauce and beef fat in the pot. This creates a simple, savory porridge that is a staple of the Kimura experience.

The atmosphere is loud and nostalgic, with dark wooden pillars and a constant flow of families and solo diners. It is not a place for a quiet or formal dinner. One practical point for international visitors: Kimura is a cash-only establishment. Despite the large seating capacity, wait times can be significant during peak hours. No. Sukiyaki Kimura is strictly CASH ONLY. Following the traditional Showa-era style, no cards, electronic money, or QR payments are accepted. Please ensure you have enough cash before arriving.

Q: Is a reservation necessary?
Strongly recommended. While the restaurant is large, it fills up instantly. Without a reservation, you will likely have to wait in line at the entrance. Booking via TableEX ensures a much smoother entry into the 2nd-floor dining hall.

Q: I am worried about cooking the sukiyaki myself.
Don't worry. Every table has a simple "How to Cook" guide. While the staff is busy, the process is straightforward: add sugar, add sauce, and use the water pitcher if it gets too salty. It’s part of the fun.
