Kuchibashi Modern sits a few minutes from both Karasuma Station and Shijo Station, just off the busier streets of central Kyoto. The location is convenient, but the block itself is quieter than you might expect. By evening, the room is usually full.
The restaurant has earned a place in Tabelog’s Yakitori WEST Top 100, but it does not present itself with the stiffness that sometimes comes with highly rated counters. The mood is active, casual, and social. Counter seats face the grill, tables sit nearby, and when every seat is taken the room feels lively rather than formal.
What makes the restaurant worth seeking out is its use of different chickens rather than reliance on one famous breed. Omi shamo, Omi jidori, Kyoto red jidori, mature hens, and younger birds all appear. That means flavor changes from skewer to skewer. Some cuts are firmer and deeper in taste, others softer with more fat or sweetness. The meal becomes a comparison as much as a dinner.
The menu works two ways. You can order à la carte and choose specific breeds or cuts, which is ideal if you already know what interests you. For a first visit, the omakase is easier and usually smarter. It gives a broader sense of how the kitchen cooks and how the different birds behave over the fire.
Grilling here favors moisture and balance over heavy char. Even richer cuts stay clean on the palate. Skin crisps, fat renders, interiors stay soft. With mature hens or stronger flavored breeds, that control matters.
The final course is more serious than an afterthought. Choices often include chicken soba, oyakodon, soboro rice, or chicken dashi chazuke. The oyakodon is especially strong, with softly set egg and a dashi led finish that avoids heaviness. If you want to end lighter, the soba is a good call.
Kuchibashi Modern is not trying to reinvent yakitori. It simply gives diners more ways to understand chicken than most places do, and does so without unnecessary ceremony.
