The owner-chef, Nobuhiko Masuda, was born in Shiga in 1957 and spent twenty years honing his skills at Shofukuro in Yokaichi, eventually serving as the deputy head chef. This lineage is significant as the institution has produced many of Japan’s most prominent chefs. In 2007, Masuda established Sangencha on the former site of Gion Sasaki. His background is reflected in a culinary system that merges the sophisticated dashi techniques of his training with the rich agricultural and lacustrine products of Shiga.

The exterior maintains the traditional machiya aesthetic of Gion, featuring a narrow approach lined with bamboo fences. The interior is centered around a ten-seat, sunken-hearth cypress counter overlooking a courtyard garden, with two private rooms on the second floor. The hassun represents a seasonal landscape on a plate, contrasting Shiga’s red konjac and lake fish with Kyoto’s terrestrial produce.
