A Definitive Sushi Counter in Kanazawa

Sushi Kibatani is one of the standout sushi restaurants representing Kanazawa. Located in the atmospheric Higashi Chaya district of Kazue-machi, the shop quickly gained popularity within two years of opening. Visitors from across Japan and abroad come in search of the singular sushi experience found only here.

Chef Kibatani, originally from Toyama Prefecture, trained at Yoshiura (run by a fellow disciple of Sukiyabashi Jiro's head chef) and the prestigious Sushi Aoki in Ginza. After a stint working as a traveling sushi chef, he went independent in 2016.

The restaurant uses a single blend of red vinegar and rice vinegar for its shari. The balance of acidity, saltiness, and umami is spot on, and the temperature is kept meticulously in check. Kibatani’s style is defined by precise, minimalistic technique. He even uses rice grown by Soto Zen monks in Wajima, showcasing his unique attention to detail.

Fish is sourced daily from Himi Port, a 60-minute drive away. The lineup includes fresh, local specialties such as white sea snails, Toyama shrimp, Kue grouper, sweet shrimp, torpedo scad, frigate tuna, yellowtail, and kobako crab. His skills in aging seafood also shine, as seen in how he draws out the flavor of lean summer tuna through careful maturation.

The interior features a long, pale wooden counter and a carefully maintained miniature garden visible from the seating area. The relaxed, warm service from the hostess makes for a completely unpretentious atmosphere. The shop opens at 5 PM, making it a perfect choice for those catching an evening Shinkansen. For anyone ending their Kanazawa gourmet tour, this is the place to do it.
