The Higashi Azabu shop is compact and functional. There is an L shaped counter with eight seats, table seating including a terrace, and additional seats upstairs. The stools on the first floor are simple, while the second floor is more comfortable with backed chairs. A large wood fired oven dominates the kitchen and makes the restaurant’s priorities obvious from the moment you walk in.


What separates PST is the dough, and more specifically, the salt. The team appears to season the pies each time the dough goes into the oven. They use a flaky Okinawan salt with a clear mineral character, and the effect is immediate. The crust carries a stronger salinity than some diners may expect. For some people that will be a lot. For others, it is exactly the point. Either way, it gives the pizza a clear identity.


That salt would be too much on its own if the toppings were not built around it. They are. The signature Tamaki, named after the owner, comes with cherry tomatoes, fresh smoked mozzarella, pecorino, and basil. Crush the tomatoes before eating. Once the juices spread across the surface, the acidity softens the salt and the whole pie comes into balance. The smoke from the mozzarella adds another layer without getting in the way. It usually reaches the table fast, often within ten minutes of ordering.


Special Bianca is the richer option. Fresh burrata, buffalo mozzarella, and mascarpone bring weight and creaminess, with white truffle oil served on the side. Only part of the cheese goes through the oven, while the burrata is added afterward. You get hot crust, melted cheese, cool dairy, and optional perfume from the oil in each bite.


PST does not sit neatly in the usual categories of Naples or New York pizza. It feels more like a Tokyo original shaped by repetition, precision, and a willingness to obsess over details. It is satisfying without being heavy, which makes it work as a full meal or as one pizza with wine in the middle of the day.

URGENT: Policy for Families with Children (Aged 10 and Under) If your party includes children aged 10 or under, PST requires all guests to vacate the restaurant before 19:00. Consequently, families with young children can only reserve the 17:00 time slot. Please take this into strict consideration when planning your visit.

PST accepts bookings starting exactly one month prior to your desired dining date. Due to the limited number of tables, weekend slots often fill up within hours.

To ensure all guests can enjoy the signature wood-fired experience, seating is strictly limited to a 90-minute window. We recommend arriving exactly on time to maximize your dining duration.

What happens if I am running late for my reservation?
PST maintains a zero-tolerance punctuality policy. If you are late by 5 minutes or more, your reservation will be automatically canceled, and your table will be released to other guests immediately.
Please be aware that this 5-minute rule applies even if you contact the restaurant in advance to inform them of your delay. In the event of such a cancellation, a 100% cancellation fee will be strictly charged to your registered card. We strongly recommend arriving at least 10 minutes before your scheduled time to account for any local transport delays.

Is there a specific way to enjoy the pizza at PST?
