While some questioned whether someone so young could handle such a serious craft, Ishibashi quickly proved himself and has turned his restaurant into a major player in Fukuoka’s competitive sushi scene.
His style is a thoughtful fusion of Kyushu’s local seafood and classic Edomae techniques. All the fish he uses are locally caught in Kyushu, and he elevates ingredients like Ishidai(striped beakfish), Hirasuzuki(Japanese sea bass), and Shimaaji(striped jack)with precise, traditional preparation learned during his time at Yoshitomi Sushi.
The shari (sushi rice) is made using a blend of two types of red vinegar. It has a deep color but a surprisingly mild flavor. The rice is cooked carefully to preserve a chewy texture that lets its natural sweetness shine.
There’s also plenty of creativity on display. He’ll open up Kurumaebi(Japanese tiger prawn)for a striking presentation, or top lightly grilled Nodoguro(blackthroat seaperch)with kelp-cured daikon. These touches are inventive without being gimmicky.
