At the counter now stands the fourth-generation chef, Takashi Nakahara. He began his culinary journey at the kappo-style restaurant Tokisou in Fukuoka, then honed his sushi skills at Tokyo’s Sushi Shin and other establishments.
Thanks to his background in Japanese cuisine, Nakahara’s small dishes show impressive finesse. He might pair creamy shirako (milt) with the bold bitterness of Okinawan goya (bitter melon), or match fatty herring with onion and okra. His use of seasonal vegetables to enhance flavors reflects a deft touch and clear culinary vision.
The Shari (sushi rice) is boldly seasoned with red vinegar, delivering a sharp punch of acidity and saltiness. Its temperature is expertly maintained from start to finish, ensuring each bite is served at its peak.
