One of the brightest hopes among the next generation of sushi chefs in Fukuoka, Sushi Bunpei has been quietly gaining the attention of insiders and food lovers alike. Chef Bunpei Matsuo is the son of Yuji Matsuo, a two star Michelin chef who built his own sushi legacy in Karatsu. He also trained under the second generation of Sushi Tsukuta, whose roots go back to the legendary Takeaki Niitsu of Kiyota.

Though deeply respectful of his father’s craft, Bunpei is not simply preserving tradition—he’s eager to shape his own path. Inspired by Junya Kudo of Ikko, a rising star in Tokyo, Bunpei brings a fresh perspective to his menu. You’ll find creative touches like torafugu shirako turned into a silky sauce for somen noodles, or shark fin braised in dashi then lightly fried to a crisp. Each tsumami shows a delicate but bold hand.

The shari (sushi rice) is lightly seasoned, designed to gently support and lift the flavors of the neta (the ingredients). His nigiri lineup focuses on Edomae classics like Kohada(gizzard shad), Saba(mackerel), Ebi(shrimp), and Anago(conger eel), while the maguro comes from the famed Tokyo wholesaler Yamayuki—clear proof of his commitment to top quality sourcing.

Bunpei is what you might call a sushi thoroughbred, and his trajectory feels inevitable. It is only a matter of time before reservations here become near impossible. If you have plans to visit Fukuoka, this is the kind of place you’ll want to lock in early.
