When asked about Tokyo’s top sushi restaurant, many sushi chefs and enthusiasts alike would name Harutaka—and we'd likely say the same. The appetizers, nigiri, and sake selection are outstanding, but it’s the ambiance and warmth of the hospitality that place Harutaka in a league of its own (as do the prices, understandably)

A Michelin three-star rating feels genuinely right. Chef Harutaka Takahashi, a revered apprentice of the great Jiro Ono, has inherited his mentor’s spirit and adapted it to create something even more refined for the modern era.

His rice, seasoned solely with white vinegar "Shiragiku", has a milder acidity yet a rich umami depth that sets it apart from Sukiyabashi Jiro. Achieving such depth with just one type of vinegar showcases Takahashi’s remarkable skill and is a key reason why he’s respected even among sushi legends.

For those willing to spare no expense to experience the pinnacle of sushi in Tokyo—or indeed all of Japan—Harutaka is an unmissable destination.
