Straight Through the Core of Edomae Sushi

This is a sushi spot that takes the most direct path through the core of classic Edomae style.

The chef, Yuki Hayashinouchi, is the only known direct apprentice of the legendary Hachiro Mizutani of the now-closed Sushi Mizutani, a craftsman once mentioned in the same breath as Jiro Ono of Sukiyabashi Jiro. Highly respected among fellow sushi chefs, Hayashinouchi is also known for embodying the spirit of the traditional sushi artisan, a rare quality these days.

There are three signature points about Sushi Yuki: the omakase course focuses purely on nigiri, the chef’s mastery in letting the shari steal the show, and a distinctive, personal touch in how that shari is made.

Shari (sushi rice) here is blended from several types of rice vinegar. It leans acidic but with a gentle salinity, bold without making you thirsty. The flavors evolve in the mouth, resonating with the umami of the neta.

For tuna, Hayashinouchi sources from Yunoka, a tuna supplier beloved by young chefs. For white fish, he buys directly from a Setouchi-based fisherman known for his expertise in ikejime processing. This mix of top-tier suppliers and a no-nonsense approach to showcasing ingredients reflects a humble pride in the craft. Many younger chefs look up to him as the big brother of the sushi world.

If he keeps going at this pace, Sushi Yuki is poised to become a leading light of Tokyo’s sushi scene in the next decade, much like Harutaka is now. Considering his heritage from the prestigious Jiro line, the fact that you can enjoy a full omakase experience here at this level is almost unbelievable. For anyone on a Tokyo sushi tour, this is an essential stop.
