Shibuya’s Most Ambitious New French Restaurant
The chef, Satoru Uchida, began his career at ASO in its golden era, later honing his craft at NARISAWA and most recently serving as sous-chef at UNIS. You might expect him to stick with classic French cuisine, but instead, he delivers a distinctive style that blends Japanese sensibilities with French technique—an East-meets-West approach that international diners will especially enjoy.
On our autumn visit, the menu featured uniquely prepared seasonal Japanese ingredients like katsuo (bonito), ayu with roe, matsutake mushrooms, sanma (Pacific saury), abalone, and Iwate shorthorn beef. The standout dish was their signature aged wagyu. Grilled slowly over lava stones, it’s cooked precisely based on each guest’s arrival time. The result is tender, melt-in-your-mouth beef with no heaviness at all.
The tableware, considered “the kimono of the cuisine,” includes Arita ware, Kiyomizu ware, Karatsu ceramics, Tokoname pottery, and wooden pieces made from Akita cedar—all specially commissioned from craftspeople and kilns across Japan. “Even though we’re based in Shibuya, I want the mindset to be rooted in local gastronomy,” says Uchida.
In a city where high rents often favor marketing-savvy concepts over substance, FUSOU stands out as a rare luxury restaurant with true culinary ambition. For anyone looking to spend a special evening in Shibuya, there’s really only one choice right now: FUSOU.
