The pork, primarily from Chiba Prefecture, is selected through long-standing relationships with trusted suppliers. Sugita is not bound by brand names or regions but chooses only the best cuts available at any given time.
Each tonkatsu is coated in a thin, crisp layer of breadcrumbs and fried using a unique three-step process that shifts between high and low temperatures to draw out the best texture and flavor. The rosu (loin) cut is particularly well executed. Excess fat is carefully trimmed so the natural sweetness of the fat never overpowers the meat’s umami and richness. Because the crust is so flavorful on its own, many regulars skip the sauce and opt for a pinch of salt instead.
The side dishes here are also exceptional. The pork sauté is made with generous butter, soy sauce, and a hint of whisky, giving it a deep and addictive aroma. Another must try is the signature omelette. It arrives glossy on the outside and unbelievably soft and creamy within.
