The pork used here is Sangenbuta, a Japanese three way crossbreed known for its fine grained meat and ideal balance of tenderness and texture. The high quality fat is snow white, never greasy, and melts delicately on the tongue with a natural sweetness that has earned praise from tonkatsu chefs across Japan.

The golden brown crust clings snugly to the pork, crisp and light with every bite. For your first piece, try it simply with a pinch of rock salt placed at the counter. The mild salt enhances the refined umami of the thick, juicy meat.
