The signature dish, Submarine, uses Himuro buta pork aged for two weeks at sub zero temperature. The crust is coarse and crisp without feeling heavy. It is fried in premium taihaku sesame oil, which leaves a cleaner finish than many richer oils. The thick cut pork belly stays remarkably tender, while the fat turns sweet and soft as it warms. Rock salt brings out the depth of the meat, while the house Taiyo sauce adds gentle acidity and sweetness for a different direction.


Rice is Koshihikari from Naka Uonuma, served with enough firmness to stand beside the richness of the pork. The red miso soup carries a light note of sansho. Pickles include smoky iburigakko from Akita. Shredded cabbage with plum dressing gives the meal needed freshness. Another strong order is the katsu curry. The sauce is thinner than the heavy gravies found elsewhere, with sweetness from slowly cooked onions and a mild lift from cayenne pepper.
