The omakase features classic Edo-style neta such as Kohada (gizzard shad), Hamaguri (hard clam), and Kasugo (young sea bream), alongside superb tuna sourced through his trusted connection with the famed wholesaler Yamayuki, a relationship inherited from his time at Arai.
