Yakiniku M specializes in Matsusaka beef, one of Japan’s best known Wagyu brands, and purchases whole cattle rather than individual cuts. That matters because it allows the kitchen to serve a much wider range of parts than restaurants buying only standard sections. Familiar favorites sit beside rarer cuts that are harder to find elsewhere.
