Opened in November 2022 near the Nishi-Azabu intersection, EUREKA! is one of Tokyo’s most talked-about new sake restaurants. Its owner, Marie Chiba, is a trailblazer in Japan’s sake world — a former systems engineer who studied organic chemistry at university before shifting careers to hospitality. Blending science with intuition, she has pioneered a new discipline of sake and food pairing grounded in chemical analysis, all while collaborating closely with breweries across Japan. After her acclaimed success at GEM by moto in Ebisu, EUREKA! represents her independent “discovery” — the literal meaning of its name.
Inside, the space is intimate and striking: a curved twelve-seat counter, a private four-person room, and soft neon lighting that creates a playful yet elegant atmosphere. The sake lineup is staggering — around 300 labels sourced from roughly 30 select breweries. Many bottles are original collaborations made exclusively for EUREKA!, the result of Chiba’s deep relationships with sake makers nationwide.
While sake is the star, the food more than keeps pace. Developed together with a French-trained chef, the menu reimagines pairing as a sensory dialogue — balancing acidity, aroma, and temperature with each pour. The signature blue cheese ham katsu layers thick-cut ham with pungent blue cheese and fermented black garlic, yielding a complex, savory richness that demands a sip of bold sake.
