The restaurant features only the finest selections of wagyu from pure Tajima bloodlines, including Kobe beef and the ultra-rare Tokusan Matsusaka beef. It truly is the best meat in Japan,” says owner-chef Satoru Tanaka with quiet pride. His deep connection to beef stretches back generations. His grandfather was a livestock broker, and his father ran a butcher shop.

Tanaka’s ambition for Nikuya Tanaka is nothing less than to become the world’s most exceptional meat-focused kappo. The omakase course consists of around ten or eleven dishes, each showcasing Japanese culinary techniques through the lens of wagyu. You might begin with kombu-marinated wagyu round, then move to sashimi of wagyu paired with the liver of kawahagi(filefish), followed by wagyu tempura.

Each dish delivers a finely tuned and often surprising balance of flavors, combining seasonal ingredients from across Japan with the richness of wagyu. But the undeniable highlight is the steak served as the main course. Slowly grilled over charcoal for about an hour, the surface is perfectly seared while the inside remains incredibly juicy and tender. It is a masterclass in temperature control and timing.

The course price may approach fifty thousand yen, which may sound extravagant. Yet given the rarity and quality of the wagyu involved, it is arguably a remarkable value.
